These are a family favourite - they don't last very long in my house and they are so simple to make. Hope you enjoy them.

  • 225g (8 oz) self raising flour
  • pinch of salt
  • 170g (6 oz) butter
  • 110g (4 oz) sugar
  • 1 beaten egg

MethodPrep:15min ›Cook:12min ›Extra time:3min › Ready in:30min

  1. Sift flour and salt into a bowl, then rub in the butter until it resembles breadcrumbs.
  2. Add sugar and beaten egg and mix into a stiff dough, turn out onto a floured surface and knead gently until smooth.
  3. Wrap in cling film and chill in the fridge for about 30 mins.
  4. Roll out onto a floured surface about 6mm (1/4 in) thick, and cut into about 30 rounds. Place on a buttered baking tray and place in oven at 180 C / Gas 4 for about 12-15 mins until golden.

So easy to make, just make sue to leave enough space between each biscuit when you cook them. My first batch became a giant biscuit, but there were no complaints from the kids-27 Oct 2011

This is a fab. Made these with my 4 year old son he loved every minute of it as well as the end products ;o). Like previous review had to add a little more flour, however the biscuits are yummy. Thanks for sharing....-06 Nov 2014

Lidia's Almond-Apricot Butter Cookies

These delicious almond-apricot cookies are best served with a cup of tea and make a great additions to any festive dessert table. Make these cookies and gift them to your friends and family that have a sweet tooth. Serve these during the holidays or any time you have to please a crowd of sugar-lovers.

    1. Preheat oven to 500°F with rack in middle.
    2. Sift together flour, baking powder, and salt into a large bowl. Add lard, coating it with flour, then rub between your fingertips until coarsely blended with some 1/2-inch lumps.
    3. Make a well in flour mixture, then add buttermilk, stirring just until a dough forms (it will be soft and sticky). Turn dough out onto a floured surface and knead 8 to 10 times. Roll out dough with a floured rolling pin into a 12-inch round (1/2 inch thick) and, using a fork dipped in flour, prick all the way through about every 1/2 inch.
    4. Cut out as many rounds as possible with a 2 1/2- to 3-inch round cookie/biscuit cutter dipped in flour (do not twist cutter).
    5. Bake, almost touching, on an ungreased heavy baking sheet, rotating sheet after about 6 minutes if browning unevenly, until crusty and golden-brown, 12 to 15 minutes. Brush tops with melted butter and serve warm or at room temperature.

    Ugly but Good Cookies (Brutti ma Buoni)

    These delicious hazelnut cookies, known as ugly but good ( brutti ma buoni in Italian), come from northern Italy. The origins are unsure, some say Piedmont, others Lombardy. Whatever the history, I can tell you that they are very delicious and, in the end, this is what matters most.

    The term ugly but good is quite appropriate because these cookies don&rsquot look too attractive but vanish off the serving plate in minutes. You need only three ingredients: hazelnuts, sugar and egg white.

    The exterior is wonderfully crisp and the interior soft and chewy.

    As they are without flour, they are perfect for who is intolerant to gluten. All their fat comes from the natural oils in the hazelnuts and they are held together by nothing more than beaten egg whites.

    Don&rsquo’t worry if these cookies are irregularly shaped and lumpy. The shape should not be too smooth, so they can turn out &ldquougly&rdquo

    Anginetti, Italian Lemon Knot Cookies

    Iced Italian cookies, lemon drops, lemon knots, wedding knots or anginetti, whatever your family calls them you’ll be sure to find these traditional Italian cookies at many special occasions and holiday cookie trays. Like most Italian cookies the cookie itself is not too sweet, it has a nice moist crumb and by frosting it you’ll get a more intense lemon flavor, which is a good thing!

    They’re like little puffs, they look the same color from the raw to baked state except they’ll get puffier and golden brown on the bottom.

    Honestly, there are so many variations to this cookie, just do a Google search and you’ll see what I mean, but the general idea remains the same. In the past I’ve made them with Crisco shortening, that’s what they used back in the day, then I tried some Organic non-hydrogenated vegetable shortening, which quite honestly turned out a little drier, I think if I upped the amount they would have been better, but this time I used all butter.

    You’ll also see other flavorings used such as almond and anise as well as different colored frosting’s and sprinkles, but my family always sticks with lemon.

    Instead of colored sprinkles which I normally use, this time I wanted to do a white on white look by using tiny white non-parells and white sparkling sugar and a little lemon zest for garnish, but you can just stir some zest into your frosting instead.

    Speaking of frosting, this time I tried a limoncello frosting which was very good but the traditional with extract, lemon juice and zest is just as good!


    Recipe Summary

    • 1 cup sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon fine salt
    • 3 large eggs, lightly beaten
    • 1 tablespoon pure vanilla extract
    • 1 cup slivered almonds, toasted

    Preheat oven to 350 degrees. In a large bowl, whisk together flour, sugar, baking powder, and salt. Using an electric mixer, beat in eggs and vanilla until combined. Add almonds and beat until combined.

    Divide dough in half and transfer to a parchment-lined rimmed baking sheet. Form each half into a 2 1/2-inch-wide, 3/4-inch-tall log. Bake until dough is firm but gives slightly when pressed, 20 to 25 minutes, rotating sheet halfway through. Let cool on sheet on a wire rack, 20 minutes.

    With a serrated knife, cut logs into 1/4-inch slices on the diagonal and arrange, cut side down, on 2 parchment-lined rimmed baking sheets. Bake until biscotti are crisp and golden, about 15 minutes, rotating sheets and flipping biscotti halfway through. Let cool on sheets on wire racks.

    I've been making Lydia's White Buns ever since she put her recipe in the 1992 edition of our local church cookbook. From time to time. . I make other lady's buns. . but always come back to her recipe because it works well for me. If you follow the directions carefully, I imagine you will have nice soft buns for your family as well.
    • 2 cups milk
    • 2 farm fresh eggs .. slightly beaten
    • 1 1/2 teaspoons salt
    • 1/3 cup sugar ( I cut it back from 1/2 cup)
    • 1/4 cup real butter
    • 1/4 cup shortening
    • 1/2 cup warm water
    • 1 teaspoon sugar
    • 2 tablespoons yeast
    • 6 cups flour. . .and more to knead to soft dough
    1. In a large bowl. . or in your kitchen machine. . .put the warm water, 1 tsp. sugar and yeast. . .allow to rest 10 minutes. .if it hasn't poofed by then. . start over. .either your water was too hot. . or it is old.
    2. In a medium saucepan, melt the butter and shortening. Add the milk and just warm through. . .slightly. . not too hot. . the yeast will die.
    3. Add the beaten eggs to the large bowl where the yeast is.
    4. Add the warmed milk and shortening and butter.
    5. Add the salt and sugar.
    6. Add the flour one cup at a time. . .stirring well.
    7. Allow to rest for 10 to 15 minutes.
    8. Knead the dough until smooth and elastic. . adding a bit of flour to keep it from sticking. . .Knead for at least 10 minutes. . be patient. . scrape the bits off the counter with a bench scraper and keep turning the dough. . .
    9. Let rest 1 1/2 hours with a tea towel and a plastic bag over the bowl.
    10. Give it a bit of a punch down. . and again allow to rest 10 minutes while you prepare your pans. Either spray your pans or put parchment paper on our cookie sheets.
    11. Make the dough into buns by taking a piece the size of a grapefruit. .(your hands should be oiled). .hold the dough in your left hand and with your right hand . .squeeze a small amount between your thumb and forefinger ..the size of a very small mandarin orange. . and squeeze it off. If it isn't smooth. . take the ball. .and cup it in your right hand on the counter and roll it around really quick. .
    12. Allow to rise until doubled. . about an hour.
    13. Preheat the oven to 350 F. and bake each pan until golden brown about 15 to 20 minutes depending on your oven.

    Vegan butter and margarine are similar but not the same.

    Margarine has a really distinctive flavour and a really soft texture that is not like traditional dairy butter. It is also not always vegan. It often contains milk derivatives amongst other things, even the ones that are sometimes labelled as plant-based" so be careful. Look out for ingredients like whey, lactose and casein. Also be wary of lecithin and vitamin D3 which can sometimes be derived from animals.

    My vegan butter recipe is more like dairy butter in flavour and texture than store bought margarines.
